1 tbsp olive oil

2 large red onions, thinly sliced into rings

1 cup dark brown beer

300 ml beef stock

3 tsp soy sauce

1/2 tsp black pepper

1/2 tsp chili powder

1 tsp sea salt

4 tbsp mayonnaise

2 chipotle peppers in adobo sauce, finely minced

2 tsp Tabasco sauce (chipotle variety preferred)

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.

  2. Add the thinly sliced red onions to the hot oil and sauté for 5-7 minutes, stirring occasionally, until the onions become translucent and begin to soften.

  3. Pour in the dark beer and increase heat to bring the mixture to a boil, scraping up any browned bits from the bottom of the pan.

  4. Add the beef stock, soy sauce, chili powder, black pepper, and sea salt. Stir well to combine all ingredients.

  5. Reduce heat to medium-low and simmer uncovered for at least 30 minutes, stirring occasionally, until the onions are very tender and the braising liquid has reduced significantly, creating a thick, sticky glaze. The onions should be deeply caramelized and the sauce should coat them richly.

  6. While the onions braise, prepare the chipotle mayonnaise by combining the mayonnaise and finely minced chipotle peppers in a small bowl.

  7. Add the Tabasco sauce to the chipotle mayonnaise and stir until well blended. Taste and adjust the heat level if desired.

  8. Once the braised onions are finished cooking and have reached the desired consistency, transfer to a serving bowl. Serve the beer braised onions warm or at room temperature alongside the chipotle mayonnaise.
