1 pound walleye fillets, minced (fresh or frozen)

1/2 cup onion, finely minced

1/2 cup celery, finely minced

2 tablespoons low-fat mayonnaise

1 cup reduced-sodium crushed crackers

1 large egg

1/2 teaspoon garlic powder

1/2 teaspoon dried dill

1/2 teaspoon paprika

1/2 teaspoon salt

Directions

  1. Wash your hands thoroughly with soap and warm water before beginning.

  2. Preheat your oven to 375°F. Place the minced walleye fillets in a colander or fine-mesh strainer and press down firmly with paper towels or the back of a spoon to remove excess moisture. This step is important for achieving crispy patties.

  3. In a medium mixing bowl, combine the drained minced walleye, minced onion, minced celery, mayonnaise, crushed crackers, egg, garlic powder, dill, paprika, and salt. Mix gently but thoroughly until all ingredients are evenly incorporated.

  4. Allow the mixture to rest at room temperature for 10 minutes. This allows the crackers to absorb some moisture and helps the patties hold together better during baking.

  5. Divide the mixture into 8 equal portions and gently shape each into a compact patty about 3 inches wide and 1 inch thick, handling the mixture as little as possible to keep the patties tender.

  6. Lightly coat a baking sheet with cooking spray. Arrange the patties on the sheet, spacing them at least 1 inch apart to ensure even cooking.

  7. Bake for 10 to 12 minutes until the bottoms are light golden brown. Carefully flip each patty and bake for another 10 to 12 minutes until the internal temperature reaches 160°F when measured with a food thermometer at the thickest point, or until the patties are golden brown throughout and cooked through with no translucent areas remaining.

  8. Remove the patties from the oven and allow them to rest for 2 to 3 minutes on the baking sheet. Serve warm, with lemon wedges or your preferred sauce on the side.
