2 to 3 large white nectarines, pitted, stemmed, and cut into bite-sized chunks

8 to 10 fresh strawberries, stems removed and quartered

1 tablespoon honey

1 teaspoon fresh lemon juice

4 fresh mint leaves, thinly sliced

Directions

  1. In a medium bowl, combine the prepared nectarine chunks and quartered strawberries. Drizzle with honey and lemon juice, then gently toss to coat all fruit evenly, being careful not to bruise the delicate fruit.

  2. Allow the fruit salad to rest at room temperature for 15 to 20 minutes. During this time, the fruit will release its juices and the flavors will meld together naturally.

  3. Just before serving, add the sliced fresh mint leaves and gently fold into the salad to distribute evenly without crushing the fruit.

  4. Taste the salad and adjust the flavor balance as needed. If it tastes too tart, add a small pinch of sugar. If it feels overly sweet, add a few more drops of lemon juice. The ideal balance will depend on the natural sweetness and acidity of your specific fruit.
