Ingredients

1 to 2 boneless, skinless chicken breasts

1 cup mayonnaise

1 cup fresh salsa

1 lime, zested and juiced

1 pinch chili powder

1 cup red bell pepper, finely diced

1 to 1.5 cups shredded cheese

1/4 cup green onions, finely chopped

Directions

  1. Bring a pot of water to a boil. Add the chicken breasts and reduce heat to a gentle simmer. Cook for 12 to 15 minutes until the internal temperature reaches 165°F, then remove from water and allow to cool. Once cooled, shred the chicken into bite-sized pieces.

  2. In a large mixing bowl, combine the mayonnaise and salsa, stirring until well blended.

  3. Add the shredded chicken to the mayonnaise mixture and fold gently to combine.

  4. Zest the lime directly into the bowl, then squeeze the juice through a fine strainer to remove seeds. Stir to incorporate.

  5. Add the diced red bell pepper, shredded cheese, and chili powder. Mix until all ingredients are evenly distributed.

  6. Fold in the chopped green onions just before serving or transferring to a serving dish. Serve chilled or at room temperature with tortilla chips or vegetable crudités.
