Ingredients

1 pound angel hair or capellini pasta

1/4 cup olive oil, divided

1 pound large shrimp, peeled and deveined

2 garlic cloves, sliced

1/2 cup fresh mint, chopped

3/4 cup fresh chives, chopped

1/2 cup fresh basil, chopped

1/4 cup fresh lemon juice

2 teaspoons salt

Directions

  1. Bring a large pot of salted water to a boil. Add the angel hair pasta and cook according to package directions until al dente, about 8-10 minutes. Drain well and set aside.

  2. While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the sliced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.

  3. Add the shrimp to the skillet and cook, stirring frequently, until they turn pink and opaque throughout, about 4-5 minutes. The shrimp should reach an internal temperature of 145°F. Transfer to a plate.

  4. In a small bowl, combine the chopped mint, chives, basil, remaining 2 tablespoons of olive oil, lemon juice, and salt to create the herb dressing. Stir well to combine.

  5. Place the cooked pasta in a large serving bowl and pour the herb dressing over it, tossing gently to coat. Add the cooked shrimp and toss everything together until well combined.

  6. Divide among four serving plates and serve immediately while still warm.
