Ingredients
1 pound lean ground beef
1 (14½-ounce) can chopped tomatoes
1 (10-ounce) can diced tomatoes with green chiles
2 teaspoons sugar
2 teaspoons salt
¼ teaspoon black pepper
1 (6-ounce) can tomato paste
1 bay leaf
1 (6-ounce) package medium egg noodles
6 green onions, chopped
1 cup sour cream
1 cup shredded sharp Cheddar cheese
1 cup shredded Parmesan cheese
1 cup shredded mozzarella cheese
Fresh parsley sprigs for garnish
Directions
Preheat your oven to 350°F. Brown the ground beef in a large skillet over medium-high heat, breaking it apart as it cooks. Once no pink remains and the internal temperature reaches 160°F, drain any excess fat.
Add the chopped tomatoes, diced tomatoes with green chiles, sugar, salt, pepper, tomato paste, and bay leaf to the cooked beef. Stir until well combined. Reduce heat to low and simmer for 10-15 minutes to allow the flavors to develop. Remove the bay leaf before proceeding.
While the sauce simmers, cook the egg noodles according to package directions until just tender. Drain the noodles and set aside.
Fold the cooked noodles and chopped green onions into the meat sauce, stirring gently to combine without breaking up the noodles.
Spread half of the noodle and meat mixture into a greased 9x13-inch baking dish. Dollop half of the sour cream over this layer and spread gently across the surface. Top with half of the shredded Cheddar, Parmesan, and mozzarella cheeses, distributed evenly.
Layer the remaining noodle mixture on top, followed by the remaining sour cream spread gently across. Finish by topping with the remaining shredded cheeses.
Bake, uncovered, in the preheated 350°F oven for 25-30 minutes until the cheese is melted and the casserole is heated through. The top should be lightly golden and bubbly at the edges.
Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh parsley sprigs and serve while warm.
