4 pork chops, about 3/4 inch thick

Salt and pepper to taste

2 tablespoons cooking oil, divided

1/2 red onion, sliced

1 red bell pepper, sliced

2 tomatoes, cut into 8 wedges each

2 garlic cloves, finely minced

1 tablespoon grated fresh ginger

1 can (13.5 oz) coconut milk

1 tablespoon fish sauce

1 teaspoon soy sauce

1 tablespoon fresh lime juice

1 teaspoon sugar

1 teaspoon Thai chili sauce, optional

1 handful fresh cilantro, chopped

Directions

  1. Pat the pork chops dry and season both sides generously with salt and pepper.

  2. In a medium bowl, whisk together the coconut milk, fish sauce, soy sauce, lime juice, sugar, and Thai chili sauce until fully combined and smooth. Set the sauce mixture aside.

  3. Heat 1 tablespoon of cooking oil in a large skillet over high heat. Once the oil is very hot and shimmering, add the pork chops in a single layer. Sear for approximately 2 minutes on the first side without moving them, then flip and sear the second side for another 2 minutes until a golden crust forms.
