Ingredients
2 cups sesame seeds
1/3 cup olive oil, plus more as needed
Directions
Preheat your oven to 350°F (175°C). Spread the sesame seeds in a single layer on a baking sheet.
Roast the sesame seeds in the oven for 12-15 minutes, stirring occasionally, until they become fragrant and turn golden brown. Watch carefully to prevent burning.
Remove the roasted sesame seeds from the oven and allow them to cool for 2-3 minutes.
Transfer the cooled sesame seeds to a food processor and process for 5 minutes, scraping down the sides as needed. The seeds will first become a coarse powder.
Continue processing and add the olive oil gradually in a thin stream while the processor is running. Start with 1/3 cup and add more as needed.
Process until the mixture becomes a smooth, creamy paste, about 8-10 minutes total. The natural oils from the sesame seeds will help create the smooth texture.
If the paste is too thick, add more olive oil one tablespoon at a time until you reach your desired consistency.
Transfer the tahini to an airtight container and store at room temperature or in the refrigerator for up to one month.
