Ingredients
1 teaspoon chili powder
½ teaspoon salt
⅛ teaspoon ground chipotle pepper
1 pound pork tenderloin, trimmed and cut into 1-inch-thick medallions
2 teaspoons canola oil
¼ cup apple cider
1 tablespoon maple syrup
1 teaspoon cider vinegar
Directions
In a small bowl, whisk together chili powder, salt, and ground chipotle pepper. Pat the pork medallions dry with paper towels and season both sides evenly with the spice mixture.
Heat canola oil in a large skillet over medium-high heat. Once the oil shimmers, carefully add the seasoned pork medallions and sear for 4 minutes on the first side without moving them, until a golden crust forms.
Flip the medallions and sear the second side for another 3 to 4 minutes, until the internal temperature reaches 145°F at the thickest part. Transfer the pork to a warm plate.
Add apple cider, maple syrup, and cider vinegar to the same skillet. Stir well and simmer for 1 to 2 minutes, scraping up any browned bits from the bottom, until the glaze thickens slightly.
Return the pork medallions to the skillet and turn to coat both sides with the glaze. Cook for 30 seconds, then serve immediately.
