Ingredients
3 large ripe freestone peaches, halved and pitted
Cooking spray
8 ounces burrata cheese
2 tablespoons balsamic vinegar or balsamic glaze
Fresh mint sprigs for garnish
Directions
Preheat your grill to high heat. If using an outdoor grill, allow it to fully heat; if using an indoor grill pan, heat it on the stovetop over medium-high heat until very hot.
Lightly coat the grill grates or grill pan with cooking spray. Place the peach halves flesh-side down on the grill and cook for 3–5 minutes, until deep caramelized grill marks form. The timing depends on the intensity of your heat and desired char.
Remove the peaches from the grill and set them on a serving platter. Allow them to cool for 1–2 minutes until they are warm but comfortable to handle.
Slice each grilled peach half into wedges or leave them as halves if you prefer. Arrange the peach pieces neatly on the platter.
Tear or break the burrata cheese into bite-sized pieces and distribute them over the warm peaches.
Drizzle the balsamic vinegar or glaze evenly over the peaches and burrata. Garnish generously with fresh mint sprigs and serve immediately while the peaches are still warm.
