Ingredients
1 cup dark brown sugar
1 cup water
4 ounces freshly brewed hot coffee
1 ounce Irish whiskey
1 cup heavy whipping cream
Directions
Combine the dark brown sugar and water in a small saucepan over medium heat. Stir constantly until the sugar dissolves completely, about 2-3 minutes.
Once dissolved, reduce the heat to low and simmer the sugar syrup gently for 55-60 minutes, stirring occasionally, until it reduces by about three-quarters and becomes thick and concentrated. The mixture should be noticeably darker and have a glossy appearance.
While the syrup simmers, chill a glass or heatproof coffee mug in the freezer or refrigerator.
Pour the heavy whipping cream into a separate bowl and whip it using an electric mixer or whisk until stiff peaks form. Set aside.
Once the brown sugar syrup has finished reducing, pour about 2 tablespoons of the syrup into the chilled glass.
Add the freshly brewed hot coffee to the glass with the syrup and stir to combine well.
Pour the Irish whiskey into the coffee mixture and stir gently to incorporate.
Top the coffee with a generous dollop of whipped cream, allowing it to float on the surface. Serve immediately.
