Ingredients

2 slices bacon, diced

½ cup barbecue sauce

½ cup packed brown sugar

½ cup yellow onion, diced

2 (15 oz) cans pork and beans in tomato sauce

1 cup strong brewed coffee, cooled slightly

Directions

  1. Preheat your oven to 350°F.

  2. In an oven-safe casserole dish or baking bowl, combine the two cans of pork and beans (including the tomato sauce), diced onion, barbecue sauce, and brown sugar. Mix well.

  3. Pour the cooled strong brewed coffee into the bean mixture and stir to incorporate evenly.

  4. Add the diced bacon pieces and stir everything together until all ingredients are well combined.

  5. Place the uncovered casserole dish into the preheated oven and bake for 1 hour, until the beans are heated through and the flavors have melded together. The sauce should be slightly thickened and the bacon rendered.
