Ingredients

1 cup butter

3/4 cup white sugar

3/4 cup brown sugar

1 egg

1 (15 ounce) can pumpkin puree

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground ginger

1/2 teaspoon ground nutmeg

1 (3 ounce) package cream cheese, softened

2 cups confectioners' sugar

Directions

  1. Preheat your oven to 350°F (175°C) and lightly grease your baking sheets with butter or cooking spray to prevent sticking.

  2. In a small bowl, combine the flour, baking powder, baking soda, cinnamon, ginger, and nutmeg. Whisk these dry ingredients together until evenly distributed and set aside.

  3. In a large bowl, beat together the softened butter, white sugar, brown sugar, vanilla extract, and egg with an electric mixer on medium speed until the mixture is smooth and creamy, about 2-3 minutes.

  4. Add the pumpkin puree to the butter mixture and beat until fully combined and smooth.

  5. Gradually fold or stir the dry ingredients into the pumpkin mixture until just combined. The batter will be moist and slightly thick.

  6. Using a teaspoon, drop rounded portions of batter onto the prepared baking sheets, spacing them about 2 inches apart to allow room for spreading.

  7. Bake in the preheated oven for 10 to 12 minutes, until the edges are lightly golden brown and the centers are set. The cookies should still be soft when removed from the oven.

  8. Allow the cookies to cool on the baking sheet for 2 minutes, then transfer them to a wire rack to cool completely before frosting.

  9. While cookies cool, prepare the frosting by beating the softened cream cheese with an electric mixer until creamy. Gradually add the confectioners' sugar, beating until light and fluffy, about 2 minutes.

  10. Once the cookies are completely cooled, spread or pipe a generous amount of cream cheese frosting onto the top of each cookie.
