1 box bow-tie pasta
2 large handfuls fresh spinach
1 ripe avocado
1 to 2 handfuls cherry tomatoes
3/4 cup crumbled feta cheese
1/2 bottle light champagne vinaigrette
Salt to taste
Black pepper to taste
Directions
Bring a large pot of salted water to a boil. Cook the bow-tie pasta according to package directions until al dente. Drain and transfer to a large bowl. Refrigerate the pasta until completely chilled, about 10 minutes or until ready to use.
While the pasta chills, finely chop the fresh spinach into small, bite-sized shreds and place in the bowl with the cooled pasta.
Quarter the cherry tomatoes lengthwise and add them to the pasta mixture.
Cut the avocado in half lengthwise, remove the pit, and carefully scoop the flesh into a bowl. Dice the avocado into small cubes and add to the pasta just before serving (to prevent browning).
Add the crumbled feta cheese to the bowl.
Pour the light champagne vinaigrette over all ingredients.
Gently toss all ingredients together until well combined and evenly coated with dressing.
