Ingredients

1 lb shrimp, peeled and deveined

1 1/2 tablespoons olive oil

1 1/2 cups sliced yellow onion

1 cup cherry tomatoes, halved

1 teaspoon tandoori masala spice blend

Salt to taste

Directions

  1. Pat the shrimp dry with paper towels. In a small bowl, combine the tandoori masala with a pinch of salt and mix well.

  2. Sprinkle the tandoori spice blend evenly over all the shrimp and toss gently to coat each piece thoroughly.

  3. Heat the olive oil in a large skillet over medium-high heat until shimmering, about 1-2 minutes.

  4. Add the sliced onions to the hot oil and sauté for 3-4 minutes, stirring occasionally, until they begin to soften and develop light golden edges.

  5. Add the spiced shrimp to the skillet and cook for 2-3 minutes, stirring frequently, until the shrimp begins to turn opaque and release their aromatics.

  6. Add the halved cherry tomatoes and stir well to combine. Continue cooking for another 2-3 minutes, until the shrimp are fully opaque and have reached an internal temperature of 145°F, and the tomatoes are just beginning to blister.

  7. Taste and adjust salt as needed. Serve immediately over rice, cauliflower rice, or with warm naan bread.

Shrimp and cherry tomatoes are both solid finds at Charlotte grocers—Harris Teeter, Food Lion, Kroger, and Publix all stock them year-round, and coastal shrimp aligns well with the region. The real cost driver is tandoori masala, which most locations don't carry in their regular spice aisle; expect a stop at ALDI or the international section of a larger Food Lion to find it at $3–5 for a bottle you'll use across multiple meals. The 25 minutes is honest for a skillet dish if you're starting with thawed shrimp, though prep time for deveining can push toward 35 if the shrimp come raw. This is genuinely fast weeknight food that reheats reasonably well and doesn't demand constant attention—a real win for busy families, though the tandoori masala means it's not a true pantry-raid meal.
