Ingredients

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

4 pieces Four 6-ounce boneless pork loin chops, cut 1 1/4 inches thick

1 tablespoon extra-virgin olive oil

2 garlic cloves, minced

1 Zest of 1 lime, finely grated

1 Juice of 1 lime

3 tablespoons fresh cilantro, finely chopped

Directions

  1. In a small bowl, combine chili powder, ground cumin, kosher salt, and freshly ground black pepper. Mix until evenly blended.

  2. Pat the pork chops dry with paper towels. Rub both sides of each chop evenly with the spice mixture, pressing gently so it adheres well.

  3. Heat extra-virgin olive oil in a large skillet over medium-high heat until the oil shimmers and is very hot.

  4. Carefully place the seasoned pork chops in the skillet without crowding. Sear for 5 to 6 minutes on the first side, until a deep golden crust forms.

  5. Flip each chop and sear for another 5 to 6 minutes on the second side until the internal temperature reaches 145°F when checked with a meat thermometer inserted into the thickest part of the meat.

  6. Transfer the cooked pork chops to a serving platter or individual plates.

  7. Sprinkle the minced garlic, lime zest, and fresh cilantro evenly over the hot pork chops. Drizzle with the lime juice just before serving.
