2 pounds fresh tomatoes, halved, seeded, and chopped

1 cup chopped green onions, white and pale green parts only

7 ounces crumbled feta cheese

6 tablespoons chopped fresh parsley

1/4 cup chopped fresh dill

1/4 cup extra-virgin olive oil

12 ounces penne pasta

Salt to taste

Black pepper to taste

Directions

  1. In a large bowl, combine the chopped tomatoes, green onions, crumbled feta cheese, fresh parsley, fresh dill, and extra-virgin olive oil. Toss gently to combine all ingredients evenly. Allow the mixture to rest at room temperature while you prepare the pasta.

  2. Bring a large pot of salted water to a rolling boil. Add the penne pasta and cook according to package directions, stirring occasionally, until the pasta is tender but still firm to the bite. This typically takes 8 to 12 minutes.

  3. Drain the cooked pasta thoroughly in a colander. While the pasta is still hot, add it directly to the tomato and feta mixture in the large bowl.
