Chicken Avocado Pizza

Ingredients
1 teaspoon instant or active dry yeast
1½ cups warm water
4 cups all-purpose flour
1 teaspoon kosher salt
Olive oil for the dough and for cooking
2 boneless, skinless chicken breasts, halved horizontally to create thin cutlets
Salt and pepper to taste
8 ounces mozzarella cheese, sliced thin or grated
3 ripe avocados, peeled, pitted, and sliced
Lime juice for the avocados
½ cup red grape or cherry tomatoes, sliced thin
1 cup fresh cilantro leaves
3 green onions, sliced
½ red onion, minced finely
Directions
Make the pizza dough by sprinkling the yeast over 1½ cups of warm water and letting it stand for a few minutes to activate.
In a large mixer with paddle attachment, combine the flour and kosher salt. With the mixer running on low speed, drizzle in olive oil until the flour is evenly coated. Slowly pour in the yeast and water mixture, and mix until the dough comes together into a sticky mass.
Transfer the dough to an olive oil-coated mixing bowl, form it into a ball, and toss to coat with oil. Cover tightly with plastic wrap and let rest at room temperature for 1 to 2 hours, or refrigerate until ready to use. For best results, prepare the dough at least 24 hours in advance.
When ready to prepare the pizza, season the chicken breast cutlets evenly on both sides with salt and pepper.
Heat olive oil in a grill pan or skillet over medium-high heat. Cook the chicken cutlets for 3 to 5 minutes per side, depending on thickness, until the internal temperature reaches 165°F. Remove from heat and let cool slightly, then slice into thin pieces and set aside.
Toss the avocado slices with lime juice to prevent browning and set aside.
Preheat the oven to 500°F.
Divide the dough in half (this recipe makes two pizzas). Take half the dough and gently stretch and shape it into a tight ball. Working with your hands or a rolling pin, stretch the dough into a thin, even circle and place it on an oiled baking sheet.
Drizzle the pizza crust lightly with olive oil and spread it evenly across the surface with your fingers. Lightly sprinkle with salt and pepper.
Layer the mozzarella cheese, sliced chicken, and avocado slices evenly over the crust. Sprinkle the minced red onion over the toppings.
Sprinkle a little more salt and pepper to taste, then place the pizza in the preheated oven.
Bake for 12 to 15 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
Remove the pizza from the oven and immediately top with fresh cilantro leaves, sliced cherry tomatoes, and sliced green onions. Squeeze fresh lime juice over the top, then slice and serve immediately.
