Ingredients

1 1/2 cups all-purpose flour, plus more for dusting

1/2 teaspoon salt

1/4 teaspoon baking powder

1 stick (4 ounces) unsalted butter, chilled and cut into small pieces

Ice water, as needed

6 ounces Latin American white frying cheese, cut into 1/4- by 1 1/2-inch batons

2 cups vegetable oil for frying

Directions

  1. In a large bowl, whisk together the flour, salt, and baking powder. Add the chilled butter pieces and work them into the flour mixture using your fingers or a pastry cutter until the mixture resembles coarse breadcrumbs.

  2. Add ice water a little at a time, mixing gently until the dough comes together. Form it into a disk, wrap in plastic, and refrigerate for at least 30 minutes.

  3. Lightly dust a work surface and your hands with flour. Roll out the dough to about 1/8 inch thick and cut it into rectangles approximately 4 inches long by 2 inches wide.

  4. Place a cheese baton on one side of each dough rectangle. Fold the dough over the cheese and seal the edges by pressing with your fingers or a fork.

  5. Heat the vegetable oil to 350°F in a deep pot or skillet. Working in batches, carefully slide the churros into the hot oil.

  6. Fry until golden brown and crispy, about 2 to 3 minutes per side, turning halfway through cooking. The exterior should be golden and the cheese warm inside.

  7. Using a slotted spoon, transfer the fried churros to a paper towel-lined plate to drain excess oil. Serve hot.
