Ingredients

1 cup fresh blackberries

1½ sprigs fresh mint sprigs

1 ounce freshly squeezed lime juice

4 ounces blanco tequila

6 ounces pineapple juice

club soda

ice cubes

Directions

  1. Place the fresh blackberries and mint sprigs in the bottom of a cocktail shaker. Using a cocktail muddler, gently press and crush the berries and mint together to release their juices and mint oils, about 10-15 times. Add the freshly squeezed lime juice and stir gently to combine with the muddled ingredients.

  2. Pour the blanco tequila and pineapple juice into the shaker with the muddled mixture. Add several ice cubes to the shaker, then securely fasten the lid. Shake vigorously for 30 seconds until the mixture is well-chilled and the outside of the shaker becomes frosty.

  3. Fill two cocktail glasses with fresh ice cubes. Pour the entire contents of the shaker, including the muddled fruit and mint pieces, evenly between the two glasses. Top each cocktail with a quick splash of club soda for added sparkle and light carbonation.

  4. Serve the cocktails immediately while they are cold and the carbonation is at its peak.
