Directions
Pour the warm water into a large mixing bowl. Add the sugar and instant yeast, stirring gently to combine. Let the mixture sit for about 5 minutes until foamy, indicating the yeast is active.
Add the olive oil and kosher salt to the yeast mixture and stir to incorporate.
In a separate bowl, whisk together the whole wheat flour and all-purpose flour. Gradually add the flour mixture to the wet ingredients, stirring with a wooden spoon until a shaggy dough forms.
Turn the dough out onto a lightly floured work surface and knead for 8–10 minutes, adding extra flour as needed, until the dough becomes smooth and elastic.
