Irish Soda Bread Cookies

Ingredients
2 cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
½ pound unsalted butter, softened
½ cup sugar
1 egg
½ cup raisins
⅓ cup buttermilk
Directions
Preheat your oven to 375°F. Line baking sheets with parchment paper.
In a medium bowl, whisk together the flour, baking soda, and salt.
In a large bowl, cream together the softened butter and sugar until light and fluffy, about 2–3 minutes.
Beat in the egg until fully incorporated.
Alternate adding the flour mixture and buttermilk to the butter mixture in three additions, beginning and ending with the flour mixture. Mix gently until just combined.
Fold in the raisins until evenly distributed throughout the dough.
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 12–14 minutes, or until the edges are lightly golden and the cookies are set but still tender.
Remove from the oven and cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
