Ingredients
1 small Chicken, cut into breasts and legs
6 tbsp Fresh ginger, shredded
6 count Scallions, chopped
3 tbsp Peanut oil
1 tbsp White vinegar
4 tsp Sesame oil
1 tsp Sugar
½ tsp Salt
2 clove Garlic cloves, minced
1 tbsp Cornstarch
⅔ cup Chicken stock
Directions
Pat the chicken pieces dry and place them in a large bowl. Sprinkle with salt, sugar, and cornstarch. Add the white vinegar. Toss gently until the chicken is evenly coated. Cover and refrigerate for at least 30 minutes.
Remove the chicken from the refrigerator and bring to room temperature for 5 minutes. Heat 2 tablespoons of peanut oil in a large wok or skillet over high heat until it begins to smoke. Add the shredded ginger and cook, stirring occasionally, for 30 seconds until fragrant. Remove and discard the ginger.
Add the marinated chicken to the hot wok. Spread it out with a spatula and allow it to cook undisturbed for about 1 minute until lightly browned on the bottom. Then stir frequently and continue cooking until the chicken is nearly cooked through, about 2 to 3 minutes longer. The chicken should reach an internal temperature of 165°F. Transfer to a clean bowl and set aside.
Add the remaining 1 tablespoon of peanut oil to the wok and heat over high heat until it just begins to smoke. Add the chopped scallions and minced garlic. Stir-fry for about 30 seconds until fragrant.
Return the cooked chicken to the wok along with the chicken stock. Toss everything together and cook for 1 minute more, stirring gently to combine. Drizzle with sesame oil and transfer to a serving platter. Serve immediately with steamed rice.
Comments
All ingredients are standard stock at Harris Teeter, Food Lion, Kroger, and Walmart with no special stops required. The stated 45 minutes is honest for a straightforward steamed dish, though you'll want fifteen minutes beforehand to prep the ginger and scallions finely. Cost per serving runs under $3 if you use a family pack of chicken and pantry staples you likely have. This is a weeknight workhorse: minimal active cooking, forgiving technique, and it reheats well the next day over rice, making it genuinely useful for busy households.
