Ingredients

1 1/2 cups all-purpose flour

1 1/2 teaspoons baking powder

1/4 teaspoon nutmeg

1/2 teaspoon salt

1/2 cup sugar

6 tablespoons butter

1 egg

1/2 cup milk

1 teaspoon cinnamon

Directions

  1. Preheat your oven to 350°F. In a medium bowl, sift together the flour, baking powder, nutmeg, and salt to remove any lumps and incorporate air. Set this dry mixture aside.

  2. In a large bowl, cream together the sugar, butter, and egg until the mixture is light and fluffy, about 2-3 minutes of beating.

  3. Alternately add the sifted flour mixture and milk to the creamed mixture in three additions (flour, milk, flour, milk, flour), beating well after each addition until just combined.

  4. Divide the batter evenly among 9 greased muffin cups, filling each about two-thirds full.

  5. Bake at 350°F for 20 to 25 minutes, until a toothpick inserted into the center comes out clean and the muffins are golden brown.

  6. While the muffins bake, combine the cinnamon and remaining sugar in a small bowl and set aside.

  7. Melt 3 tablespoons of butter in a small bowl or saucepan.

  8. As soon as the muffins come out of the oven, remove them from the pan while still warm. Working quickly, dip each warm muffin into the melted butter to coat all sides.

  9. Immediately roll each butter-coated muffin in the cinnamon-sugar mixture until well coated on all sides.

  10. Serve the puffs warm while the coating is still fresh.
