Ingredients

2 large onions, thinly sliced

2 cans chopped tomatoes (14 oz / 400g each)

1 tablespoon sugar

1 tablespoon balsamic vinegar

Salt and black pepper to taste

500g boerewors sausages (or quality pork sausages)

4 fresh hotdog rolls

Wholegrain mustard, for serving

Coleslaw, for serving

Directions

  1. Heat a large heavy-bottomed pan over medium heat. Add the sliced onions and sauté, stirring occasionally, for 8–10 minutes until golden and softened. Do not allow them to brown too quickly; keep the heat moderate for even cooking.

  2. Pour in both cans of chopped tomatoes with their juice. Stir in the sugar and balsamic vinegar. Season with salt and pepper to taste.

  3. Reduce the heat to low and simmer the tomato-onion mixture uncovered for 20–25 minutes, stirring occasionally. The relish should thicken and the flavors should meld together. Adjust seasoning as needed.

  4. While the relish simmers, prepare the boerewors. Heat a grill pan or barbecue to medium-high heat. Grill the sausages for 12–15 minutes, turning frequently, until they reach an internal temperature of 160°F (71°C) and are well browned on all sides.

  5. Lightly toast the hotdog rolls on the grill or in a toaster for 1–2 minutes until they are warm and slightly crispy.

  6. Place one grilled boerewors sausage into each toasted hotdog roll. Top generously with the warm tomato-onion relish.

  7. Serve immediately with wholegrain mustard and coleslaw on the side. Divide into individual portions and enjoy.
