1 lb beef tenderloin
1/2 cup Worcestershire sauce
1 tbsp prepared horseradish
2 garlic cloves, crushed
1 tbsp whole green peppercorns
1 tbsp black peppercorns
1 tbsp pink peppercorns
1 tbsp white peppercorns
coarse sea salt to taste
2 tbsp olive oil
fresh Italian flat leaf parsley for garnish
Directions
Combine the green, black, pink, and white peppercorns in a mortar and pestle or spice grinder. Coarsely crush them to release their flavors while maintaining some texture and whole pieces. Do not grind into a fine powder.
Remove the beef tenderloin from refrigeration 15 minutes before cooking to allow it to reach room temperature. Pat the meat thoroughly dry with paper towels.
Season all sides of the beef tenderloin generously with coarse sea salt. Press the crushed mixed peppercorns firmly onto all surfaces of the meat, creating an even coating.
Heat the olive oil in a large heavy-bottomed skillet over medium-high heat until shimmering and just beginning to smoke.
Carefully place the seasoned beef tenderloin in the hot skillet. Sear for 3-4 minutes on the first side without moving it, until a deep golden-brown crust forms.
Turn the beef and sear the second side for another 3-4 minutes until equally browned.
Continue turning the beef every 2-3 minutes to sear all remaining sides (top and bottom) until the entire surface has a golden-brown pepper crust, about 10-12 minutes total searing.
Add the crushed garlic cloves to the skillet, stirring to avoid burning them. Cook for 1 minute until fragrant.
Pour the Worcestershire sauce into the skillet, tilting to coat the beef. Stir in the prepared horseradish until well combined.
Reduce heat to medium. Continue cooking the beef in the sauce, turning occasionally, until a meat thermometer inserted into the thickest part of the tenderloin reads 145°F (medium-rare). This should take approximately 5-10 minutes depending on the thickness of the cut.
Remove the skillet from heat. Let the beef rest for 5 minutes while still in the pan with the sauce.
Transfer the beef tenderloin to a cutting board. Slice the meat into portions, if desired, and arrange on serving plates. Drizzle with the pan sauce and garnish with fresh Italian parsley. Serve immediately.
