Ingredients
1 cup steel-cut oats (pinhead oats)
3 cups cold water or whole milk (or combination)
Kosher or sea salt, to taste
Unsalted butter or cream, for serving (optional)
Brown sugar, for serving
Directions
Bring the cold water or milk (or combination) to a boil in a heavy-bottomed pot or saucepan over medium-high heat.
Slowly stir the steel-cut oats into the boiling liquid, stirring constantly to prevent lumps from forming.
Reduce the heat to medium-low and add a pinch of kosher or sea salt. Simmer gently, stirring frequently, for about 20–25 minutes until the oats are tender and have absorbed most of the liquid, creating a creamy consistency.
If the oatmeal becomes too thick during cooking, add a splash of additional water to reach your desired consistency.
Divide the creamy oatmeal among four serving bowls. Top each portion with a generous sprinkling of brown sugar and a small knob of butter or a dollop of cream, if desired.
