Ingredients

1 large onion, chopped

3 tablespoons margarine or butter

1 1/2 cups dry split peas

6 cups water

1 teaspoon salt

Directions

  1. Rinse the split peas under cold running water and drain them thoroughly in a colander.

  2. Heat the margarine or butter in a large pot or Dutch oven over medium heat.

  3. Add the chopped onion to the pot and cook, stirring occasionally, until the onion becomes soft and translucent, about 5-7 minutes.

  4. Pour the water into the pot with the cooked onion.

  5. Add the rinsed split peas and salt to the pot and stir well to combine.

  6. Bring the mixture to a boil over medium-high heat, stirring occasionally.

  7. Once boiling, reduce the heat to low, cover the pot with a lid, and simmer for approximately 2 hours, stirring occasionally, until the peas break down completely and the soup thickens into a rich, creamy consistency.

  8. Taste the soup and adjust seasoning with additional salt if needed. Serve hot.

Every ingredient is a staple at every major Charlotte chain, and the cost per serving lands under a dollar—split peas are dirt cheap and carry the dish. The stated time is honest; simmering split peas does take the better part of two hours. The main drawback is that this recipe is bare-bones to the point of monotony: no ham, carrot, celery, or other aromatics means the soup tastes thin and one-dimensional, which matters on a weeknight when you're serving six people and expect something worth the time investment. It reheats perfectly, but the recipe itself needs embellishment to earn a regular spot in rotation.
