Ingredients
1 lb. fresh green beans, trimmed
2 slices lower-fat bacon, chopped
2 spring onions (with greens), chopped
1/4 cup sliced almonds
1 tablespoon pure maple syrup
1/4 teaspoon garlic powder
1/2 teaspoon seasoning blend (such as Red Robin Seasoning)
Freshly ground black pepper to taste
Directions
Bring a large pot of water to a rolling boil. While waiting, trim the ends off the green beans and rinse them. Chop the bacon into small pieces and set aside.
Add the trimmed green beans to the boiling water and cook for about 6 to 8 minutes, until they are bright green and just starting to become tender but still with a slight bite. They should be about 90% cooked.
While the beans cook, heat a large sauté pan over medium heat. Add the chopped bacon and cook, stirring occasionally, until the edges begin to crisp and brown, about 3 to 4 minutes.
Add the chopped spring onions (including both white and green parts) to the bacon and continue sautéing for 4 to 5 minutes, stirring frequently, until the onions are soft and fragrant.
Drain the green beans using tongs and transfer them directly into the sauté pan with the bacon and onions.
Add the sliced almonds to the pan. Sprinkle the garlic powder, seasoning blend, and freshly ground black pepper evenly over everything.
Sauté everything together, stirring constantly, for 2 to 3 minutes until the green beans are perfectly tender and all ingredients are well combined and heated through. The almonds should be warm and fragrant.
Transfer the mixture to a serving bowl and drizzle the maple syrup over the top, tossing gently to coat evenly. Serve immediately while warm.
