Ingredients

1 cup cooked chicken, shredded

1 cup salsa (mango peach or any flavor)

1 cup crispy fried onions

8 slices bread

4 slices American cheese

3 tablespoons butter, for spreading

Directions

  1. In a medium bowl, combine the shredded cooked chicken and salsa. Stir until evenly mixed and set aside.

  2. Heat a skillet or griddle over medium-high heat. Once the surface is hot, reduce the heat to medium-low.

  3. Spread a small amount of butter on one side of a slice of bread. Place the bread butter-side down in the skillet.

  4. Layer one slice of American cheese on top of the bread in the skillet.

  5. Spoon a portion of the salsa-chicken mixture (about 1/4 cup) over the cheese, then scatter some of the crispy fried onions on top. Do not overfill.

  6. Spread butter on one side of a second slice of bread and place it butter-side up on top of the filling to form a sandwich.

  7. Cook the sandwich until the cheese begins to melt and the bottom is golden brown, approximately 4-5 minutes. Gently flip the sandwich and cook the other side until it is also golden brown and crispy, about 3-4 minutes more.

  8. Transfer the cooked sandwich to a serving plate and repeat steps 3 through 7 with the remaining bread, cheese, chicken mixture, and fried onions to make 3 more sandwiches.
