1/4 cup rice wine vinegar
2 teaspoons low-sodium soy sauce
2 teaspoons brown sugar
1 clove garlic, thinly sliced
1/4 teaspoon red pepper flakes
1 pound firm tofu, cut into six 1/2-inch rectangles
Directions
In a small bowl, whisk together the rice wine vinegar, low-sodium soy sauce, and brown sugar until the sugar is completely dissolved, about 1 minute.
Add the thinly sliced garlic and red pepper flakes to the vinegar mixture and stir to combine.
Gently pat the tofu rectangles with paper towels to remove excess moisture.
Arrange the tofu pieces in a shallow dish or container in a single layer.
Pour the marinade evenly over the tofu, ensuring each piece is coated with the liquid and seasonings.
Cover and refrigerate for at least 30 minutes, or up to several hours, allowing the flavors to infuse into the tofu.
Serve chilled or at room temperature, spooning some of the marinade over each portion.
