Ingredients

7 oz Smoked trout, drained and skin removed, flaked

4 oz Cream cheese, softened

1 Tbsp Shallot, finely chopped

1 Tbsp Nonpareil capers, chopped

4 tsp Fresh lemon juice

¼ tsp Kosher salt

¼ tsp Ground black pepper

1 Tbsp Fresh flat-leaf parsley, finely chopped, plus more for topping

Directions

  1. If your smoked trout is packed in oil, drain it thoroughly using a fine-mesh strainer. Remove any remaining skin by gently peeling it away with your fingers. Flake the trout into bite-sized pieces, checking for any small bones and discarding them.

  2. In a medium bowl, combine the softened cream cheese with the chopped shallot and capers. Mix until well blended.

  3. Add the flaked trout to the cream cheese mixture. Gently fold the ingredients together until the trout is evenly distributed without breaking it into smaller pieces.

  4. Pour in the fresh lemon juice and sprinkle with kosher salt, black pepper, and chopped parsley. Fold everything together until just combined. Taste and add more salt if desired.

  5. Transfer the spread to a serving bowl or small platter. Top with additional fresh parsley for garnish. Serve immediately with crackers, toasted bread, crudités, or your choice of accompanying items.
