Ingredients

3 lbs potatoes, peeled and quartered

4 cloves garlic, minced

4 tablespoons olive oil, divided

1 cup vegetable broth

Black pepper to taste

2 teaspoons fresh parsley, finely chopped (optional, for garnish)

Directions

  1. Bring a large pot of salted water to a boil. Add the quartered potatoes and cook until they are very tender and easily pierced with a fork, about 10-12 minutes. Drain well and set aside.

  2. While the potatoes are cooking, heat 1 tablespoon of olive oil in a small skillet over medium heat. Add the minced garlic and cook gently, stirring frequently, until golden and fragrant, about 2-3 minutes. Be careful not to let it burn.

  3. Transfer the drained potatoes to a large bowl. Using a potato ricer or a sturdy masher, rice or mash the potatoes until your desired consistency is reached.

  4. Fold the browned garlic and its oil into the mashed potatoes along with the remaining 3 tablespoons of olive oil. Stir until well combined.

  5. Slowly add the vegetable broth, a little at a time, stirring gently until you reach your preferred texture. The potatoes should be creamy but not overly wet.

  6. Season with black pepper to taste. Garnish with fresh parsley if desired and serve immediately.
