5 cups Fresh peaches, peeled, pitted, and finely diced
2 tbsp Fresh lemon juice
¼ cup Unbleached all-purpose flour (for filling)
1 tsp Cornstarch
¼ cup Granulated sugar (for filling)
¼ tsp Kosher salt
1 tsp Ground cinnamon (divided)
¼ tsp Ground nutmeg
2¾ cups Unbleached all-purpose flour (for crust and topping)
1 cup Granulated sugar (for crust)
1 tsp Baking powder
1 cup Cold unsalted butter, cubed
1 Large egg, lightly beaten
½ tsp Vanilla extract
¼ cup Granulated sugar (for topping)
1 tsp Ground cinnamon (for topping)
Directions
Preheat oven to 375°F. Prepare a 9x13-inch baking dish by lightly buttering or coating with cooking spray.
Prepare the peach filling: Peel, pit, and finely dice the fresh peaches into a large mixing bowl.
Drizzle the lemon juice over the diced peaches and toss gently to coat evenly.
In a separate bowl, whisk together 1/4 cup flour, cornstarch, 1/4 cup sugar, 1/4 tsp salt, 1 tsp cinnamon, and nutmeg until well combined.
Pour the dry ingredient mixture over the peaches and stir gently with a wooden spoon until the peaches are evenly coated. Set the filling aside.
Prepare the crust and streusel topping: In a large bowl, whisk together 2¾ cups flour, 1 cup sugar, baking powder, and 1/4 tsp salt.
Cut the cold cubed butter into the flour mixture using a pastry blender, two knives, or your fingertips until the mixture resembles coarse breadcrumbs with small pea-sized pieces of butter visible throughout.
In a small bowl, whisk together the vanilla extract and beaten egg until well combined.
Pour the egg-vanilla mixture into the flour-butter mixture and stir with a fork until the ingredients are just combined. The mixture should remain crumbly in texture.
Press half of the crust mixture firmly and evenly into the prepared baking dish to form a base layer.
Spread the peach filling evenly over the bottom crust layer.
Crumble the remaining crust mixture over the peach layer, distributing it evenly to create a rustic streusel topping. Do not press down.
In a small bowl, mix together 1/4 cup sugar and 1 tsp cinnamon.
Sprinkle the cinnamon-sugar mixture evenly over the streusel topping.
Bake at 375°F for 45 to 60 minutes, until the top is golden brown and peach juice begins to bubble up around the edges of the baking dish.
Remove from the oven and allow the bars to cool completely on a wire rack before cutting into individual servings.
