Ingredients

1 1/2 cups yams, peeled and sliced

1/4 cup packed brown sugar

1 teaspoon sifted all-purpose flour

1/4 teaspoon salt

1/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon grated orange peel

1 teaspoon unsalted margarine

1/2 cup fresh orange juice

Directions

  1. Preheat the oven to 350°F. Wash the yams under cool running water and scrub gently to remove any dirt.

  2. Cut the yams in half lengthwise. Bring a large pot of water to a boil and carefully place the yam halves in the water. Boil for about 20 minutes, until the yams are tender but still firm when pierced with a fork.

  3. Remove the yams from the boiling water and let cool until they are comfortable to handle. Once cooled, peel away the skin and slice the yams into 1/4-inch thick rounds.

  4. In a small bowl, combine the brown sugar, sifted flour, salt, ground cinnamon, ground nutmeg, and grated orange peel. Mix until well blended.

  5. Lightly butter or oil a medium-sized casserole dish. Arrange half of the yam slices in a single layer on the bottom of the dish.

  6. Sprinkle half of the spiced sugar mixture evenly over the yam slices.

  7. Dot the layer with half of the margarine, distributing small pieces evenly across the surface.

  8. Top with the remaining yam slices, arranged in a single layer. Sprinkle the remaining spiced sugar mixture over the top, then dot with the remaining margarine.

  9. Pour the fresh orange juice evenly over all layers.

  10. Bake uncovered at 350°F for 20 minutes, until the yams are tender and the sauce has thickened slightly. The edges will caramelize and darken slightly when done.
