Ingredients

8 cups Water, divided

Yellow onion, diced

Green bell pepper, diced

1 pound Smoked sausage, sliced

1 teaspoon Salt

½ teaspoon Black pepper

1 tablespoon Creole seasoning

1 pound Dried red beans

2 Bay leaves

4 cups Cooked white rice

Directions

  1. Heat 1 tablespoon of water in a large stock pot over medium heat. Add the diced onion and green bell pepper, stirring occasionally, until the onion becomes translucent, approximately 8 minutes.

  2. Stir in the sliced smoked sausage, salt, black pepper, and Creole seasoning. Continue cooking and stirring for about 5 minutes until the sausage develops light browning on the edges.

  3. Pour in the remaining 8 cups of water and add the dried red beans and bay leaves. Increase the heat to bring the mixture to a boil, then reduce heat to low, cover with a lid, and simmer gently for approximately 5 hours until the beans are completely tender and the liquid has thickened into a rich sauce.

  4. Remove and discard the bay leaves. Ladle the red bean and sausage mixture over individual servings of cooked white rice and serve immediately.
