Ingredients
16 ounces Coleslaw mix with carrots or shredded cabbage
3 breasts Cooked chicken breasts, shredded
6 Green onions, finely chopped
1 cup Roasted cashews
½ cup Peanut oil or canola oil
⅓ cup Rice wine vinegar
1 tablespoon Low sodium soy sauce
2 tablespoons Sugar
1 tablespoon Nigella seeds or toasted sesame seeds
Wonton strips for garnish
1 packet Top Ramen seasoning packet
Directions
Place the coleslaw mix or shredded cabbage in a large serving bowl.
Add the shredded cooked chicken and chopped green onions to the bowl with the cabbage.
In a small bowl, whisk together the oil, rice wine vinegar, soy sauce, sugar, and Top Ramen seasoning packet until well combined.
Pour the vinaigrette over the salad and toss well to coat all ingredients evenly.
Add the cashews and gently toss again to distribute throughout the salad.
Sprinkle the nigella seeds over the top and garnish with wonton strips just before serving to maintain crispness.
Comments
This salad checks most boxes for a Charlotte weeknight: cabbage, chicken, and green onions are standard at every major chain, and cashews turn up reliably at Walmart, ALDI, and Kroger. The real cost driver is the ramen seasoning and wonton strips—expect another $2 to $3 if you don't keep them on hand—but both are staples at Food Lion and Walmart, not a special trip. The 15-minute claim holds only if your chicken is already cooked; budget 20 to 25 minutes total if you're poaching or slicing raw chicken. The dish is sturdy for reheating the next day, though the wonton strips will soften, so eat fresh for best texture.
