2 cups raw cashews, soaked overnight and drained

¾ cup unsweetened almond milk

2½ tablespoons bourbon

¾ cup cane sugar

¼ cup natural peanut butter

2 scoops dairy-free ice cream scoops

chocolate sauce

½ cup additional almond milk for serving

Directions

  1. Drain and rinse the soaked cashews thoroughly under cold water to remove excess liquid.

  2. In a high-speed blender, combine the drained cashews, almond milk, peanut butter, cane sugar, and bourbon. Blend on high until the mixture is completely smooth and creamy, about 2-3 minutes. If the blender struggles, add up to 1/4 cup more almond milk to help the blades move freely.

  3. Pour the blended mixture into an ice cream maker and churn according to the manufacturer's instructions, typically 20-30 minutes, until the mixture reaches a soft-serve consistency.

  4. Transfer the churned mixture to a freezer-safe container and freeze for 1-3 hours until it reaches a firm, scoopable texture.

  5. To serve, scoop 2 scoops of the peanut butter bourbon ice cream into each glass. Drizzle generously with chocolate sauce and pour 1/4 cup of almond milk over the top.
