Ingredients

4 Whole cloves

4 Cardamom pods

2½ Bay leaves

½ tsp Ground cinnamon

2 tbsp Ground coriander

1 cup Plain yogurt

to taste Salt

2 whole Boneless skinless chicken breasts, cut into large pieces

5 tbsp Vegetable oil

0.05 pinch Ground asafetida

2 bunches Fresh cilantro, trimmed and chopped, plus additional leaves for garnish

1 tsp Sugar

6 Serrano chiles, seeded and halved

⅔ cup Coconut milk

Directions

  1. Heat the vegetable oil in a large skillet or heavy-bottomed pan over medium heat. Once shimmering, add the whole cloves, cardamom pods, and bay leaves. Toast the spices for about 1 minute, stirring gently, until fragrant.

  2. Add the ground coriander, ground cinnamon, and ground asafetida to the pan. Stir continuously for 30 seconds to bloom the spices and release their oils.

  3. Pour the plain yogurt into the pan and stir well to combine with the spiced oil. This creates a fragrant base for the sauce.

  4. Add the chicken pieces to the yogurt mixture and season with salt to taste. Stir gently to coat the chicken evenly with the sauce.

  5. Reduce heat to medium-low and simmer the chicken, stirring occasionally, until it is cooked through. The internal temperature should reach 165°F (74°C). This typically takes 15–20 minutes depending on the size of the pieces.

  6. While the chicken cooks, prepare the cilantro and serrano chiles. Trim and finely chop the cilantro, then seed and halve the serrano chiles.

  7. Once the chicken is fully cooked, stir in the chopped cilantro, serrano chiles, sugar, and coconut milk. Mix well to combine.

  8. Simmer for another 2–3 minutes to allow the flavors to meld and the serrano chiles to release their heat into the sauce.

  9. Taste and adjust seasoning with additional salt if needed. Transfer to a serving dish and garnish with fresh cilantro leaves before serving.
