Berry Ginger Frozen Yogurt

Ingredients
3 cups mixed berries, fresh or frozen
1 tablespoon honey
1 tablespoon fresh ginger, minced
1 teaspoon lemon zest
pinch salt
32 ounce container whole milk plain yogurt
Directions
In a small saucepan, combine the mixed berries, honey, and minced ginger. Heat over medium heat, stirring frequently, until the mixture reaches a gentle boil. Then reduce the heat to low and simmer for 15 minutes, continuing to stir occasionally.
Remove the saucepan from heat and allow the berry mixture to cool for about 10 minutes.
Set a fine mesh strainer over a large bowl. Carefully pour the warm berry mixture through the strainer, using the back of a rubber spatula to gently press out all the liquid. Discard the ginger pieces and berry seeds that remain in the strainer.
Cover the strained berry-honey mixture and refrigerate until completely cold, a minimum of 8 hours or overnight. If you have an ice cream maker, place the insert in the freezer during this chilling time.
In a large bowl, whisk together the cold berry mixture, whole milk yogurt, lemon zest, and salt until fully incorporated and smooth.
Pour the combined mixture into your ice cream maker and freeze according to the manufacturer's instructions until it reaches the desired consistency.
