Ingredients
1 lb. large shrimp, peeled and deveined
2 tbsp. olive oil
Salt to taste
Black pepper to taste
4 tbsp. extra-virgin olive oil
2 tbsp. fresh grapefruit juice
1 tbsp. fresh lemon juice
1 clove garlic, minced
0.5 cup sliced red onion
4 cups mixed salad greens
1 cup fresh grapefruit segments
0.25 cup fresh flat-leaf parsley leaves
Directions
In a small bowl, combine the extra-virgin olive oil, grapefruit juice, lemon juice, and minced garlic. Whisk until well blended. Season with a pinch of salt and pepper to taste. Set the dressing aside.
Pat the shrimp dry with paper towels. Season the shrimp generously on all sides with salt and pepper.
Heat the 2 tablespoons of olive oil in a large skillet over medium-high heat until shimmering. Add the seasoned shrimp in a single layer and cook for approximately 2 minutes per side, until the shrimp are opaque and cooked through (internal temperature should reach 145°F). Transfer the cooked shrimp to a plate to cool slightly.
Place the mixed salad greens in a large serving bowl. Add the sliced red onion, grapefruit segments, and fresh parsley leaves.
Drizzle the prepared dressing over the salad and toss gently to coat all ingredients evenly.
Divide the dressed salad among four plates and top each portion with the cooled grilled shrimp. Serve immediately.
