A traditional Irish-inspired grilled cheese sandwich made with rye bread, aged Irish cheddar, and tangy mustard. Butter-toasted to golden perfection and served warm with crisp pickles on the side.

Ingredients
2 tablespoons Butter
2 slices Rye bread slices
2 tablespoons Irish mustard or Dijon mustard
2 ounces Aged Irish cheddar cheese
Small pickles, for serving
Directions
Heat a skillet over medium-low heat and add the butter, allowing it to melt completely.
Place both bread slices into the skillet and cook until they absorb the butter and become lightly colored, about 1 minute per side.
Remove the skillet from heat and spread the mustard evenly over both bread slices.
Slice the aged cheddar into thin pieces and distribute evenly over one bread slice.
Return the skillet to medium-low heat and allow the cheese to melt, about 2–3 minutes.
Press the two bread slices together with the cheese in the middle, cheese sides facing inward.
Continue cooking the sandwich in the skillet until both sides are crisp and golden brown, about 2 minutes per side, turning once carefully.
Transfer the finished sandwich to a cutting board, slice it in half diagonally, and serve immediately with small pickles on the side while the cheese is still warm and melted.
