Ingredients
1½ tbsp vegetable oil
2 skinless chicken breasts
4 smoked back bacon rashers
1 red onion, sliced
½ pack runner beans, ends trimmed
2 carrots, peeled and sliced
50 ml sticky barbecue sauce
25 g grated parmesan cheese
4 potatoes, peeled and chopped
100 ml whole milk
2 tbsp cream cheese
Directions
Preheat the oven to 200°C (180°C fan). Lightly oil a baking tray and arrange the chicken breasts on it. Season the chicken generously with salt and pepper. Lay 2 bacon rashers across each chicken breast, covering the top. Place in the oven and bake for 20-25 minutes until the chicken reaches an internal temperature of 165°F and is cooked through.
While the chicken is roasting, heat the remaining 1 tbsp of oil in a skillet over medium heat. Add the sliced red onion and cook gently, stirring occasionally, for 8-10 minutes until golden brown and very tender. Set aside.
Place the chopped potatoes in a large pot of boiling salted water and cook for 10-15 minutes until completely tender. Drain well and return to the pot.
While the potatoes are cooking, bring a separate pot of salted water to a boil. Add the runner beans and cook for 8-10 minutes until tender with a slight bite. Drain and set aside. In another pot, bring water to a boil and cook the carrot slices for 8-10 minutes until tender. Drain and set aside.
Pour the milk and cream cheese into the pot with the hot potatoes. Mash until smooth and creamy, then fold in the caramelized onions. Season to taste with salt and pepper.
Once the chicken is cooked, remove from the oven. Pour the barbecue sauce evenly over each bacon-wrapped chicken breast, then sprinkle the grated parmesan over the top. Return to the oven for 2 minutes until the cheese melts.
Divide the creamy mashed potatoes among serving plates. Top each plate with a bacon-wrapped chicken breast with sauce and melted cheese. Serve the cooked carrots and runner beans on the side.
