Ingredients
4 whole Medium peaches, washed and sliced
2 tablespoons Margarine
¾ cup Quick-cooking oats
½ cup Sugar
¼ cup All-purpose flour
2 teaspoons Ground cinnamon
1 teaspoon Fresh lemon juice
Directions
Preheat your oven to 375 degrees Fahrenheit. Wash the peaches under cool running water and pat them dry. Slice each peach in half, remove the pit, and cut the flesh into even slices about 1/2 inch thick.
Arrange the peach slices evenly in the bottom of a 9x9-inch baking pan, then drizzle the lemon juice over the fruit.
In a small saucepan over low heat, melt the margarine until it is fully liquefied.
In a separate small mixing bowl, combine the oats, sugar, flour, and cinnamon. Mix these dry ingredients together with a spoon or fork until evenly distributed.
Pour the melted margarine into the oat mixture and stir well until all the dry ingredients are thoroughly moistened and the mixture resembles coarse crumbs.
Sprinkle the oat topping evenly over the peaches, spreading it to cover the fruit in a single, even layer.
Place the baking pan in the preheated oven and bake for 20 minutes, or until the topping is golden brown and the peach juices are beginning to bubble around the edges.
Remove from the oven and allow the crisp to rest for 5 minutes before serving. Serve warm with vanilla ice cream or whipped cream if desired.
