Ingredients
1 large egg
1/2 cup fat-free milk
3/4 cup rolled oats
1 pound lean ground beef
3 tablespoons chopped onion
1/2 teaspoon salt
1/2 cup grated cheese
Directions
Wash your hands thoroughly with soap and water before handling ingredients.
Preheat your oven to 350°F (175°C).
In a large mixing bowl, crack the egg and add the fat-free milk, stirring to combine.
Add the rolled oats to the egg and milk mixture and stir until the oats are moistened.
Add the lean ground beef, chopped onion, salt, and grated cheese to the bowl. Mix all ingredients together with your hands or a spoon until just combined—do not overmix.
Lightly grease a standard 12-cup muffin tin with cooking spray or oil.
Divide the meat mixture evenly among the 12 muffin cups, filling each about three-quarters full and pressing gently to ensure even portions.
Place the muffin tin in the preheated oven and bake for approximately 1 hour, until the internal temperature of the largest meatloaf muffin reaches 160°F (71°C) when measured with a food thermometer in the center.
Remove the muffin tin from the oven and let the meatloaf muffins cool for 5 minutes before carefully loosening them with a small knife and turning them out onto a serving plate.
