Roasted Cherry Brownies

Fudgy chocolate brownies studded with roasted fresh cherries and topped with vanilla bean ice cream. The cherries are roasted until slightly caramelized, then folded into the batter to create a delightful contrast of tart fruit and rich chocolate.

Ingredients
1 cup fresh cherries
2 tablespoons granulated sugar
1 box (19.5 oz) brownie mix
½ cup vegetable oil
2 large eggs
1 pint vanilla bean ice cream
Directions
Preheat oven to 400°F. Pit the fresh cherries and cut them in half. Spread the halved cherries on a baking sheet and sprinkle evenly with the sugar.
Roast the cherries in the preheated 400°F oven for 10 minutes until they begin to caramelize and release their juices. Remove from oven and set aside to cool completely.
Reduce the oven temperature to 350°F (or according to brownie mix package directions). In a large bowl, combine the brownie mix, oil, and eggs, stirring until just combined.
Once the roasted cherries have cooled to room temperature, gently fold them into the brownie batter along with any juices that accumulated on the baking sheet.
Pour the batter into a greased 9×13-inch baking pan and spread evenly. Bake at 350°F for 25–30 minutes, or until a toothpick inserted in the center comes out with just a few moist crumbs (do not overbake).
Remove from oven and allow brownies to cool in the pan for 10 minutes before cutting into 12 squares. Serve each brownie topped with a scoop of vanilla bean ice cream while still warm.
