Brussels Sprouts with Chinese Sausage

Ingredients
6 ounces Chinese sausage, diced
1½ pounds Brussels sprouts, shredded
1 tablespoon Water
1 teaspoon Fish sauce
Directions
Place the diced Chinese sausage in a wok or large sauté pan over medium-low heat. Cook gently for about 5 minutes, stirring occasionally, until the fat begins to render. Be careful not to let the sausage burn. Push the sausage to the side of the wok so the fat pools at the bottom.
Using a slotted spoon, transfer the cooked sausage to a plate, leaving the rendered fat in the pan.
Increase the heat to medium-high. Add the shredded brussels sprouts to the hot fat in the wok and toss constantly for about 2 minutes to coat evenly and begin softening.
Add the tablespoon of water and toss the brussels sprouts to distribute the moisture.
Continue cooking for 2 more minutes, stirring frequently, until the brussels sprouts are tender and lightly caramelized at the edges.
Drizzle in the fish sauce and return the cooked sausage to the wok. Toss everything together thoroughly. Taste the mixture by getting a bite that includes both the sausage and sprouts, since the sausage is very salty. Add more fish sauce if desired, and season to your preference.
