Ingredients

2 cups almond flour

1-2 medium apples, cored and diced

¼ cup arrowroot powder

½ tsp baking soda

1 tsp ground cinnamon

¼ cup melted coconut oil

1 large egg

½ tsp ground ginger

½ tsp kosher salt

½ cup raw honey

2 tsp vanilla extract

2 tsp turbinado sugar, optional

Directions

  1. Preheat your oven to 350°F.

  2. In a large bowl, whisk together the almond flour, kosher salt, baking soda, arrowroot powder, cinnamon, and ground ginger until evenly combined.

  3. In a separate bowl, whisk together the melted coconut oil, honey, egg, and vanilla extract until smooth and well blended.

  4. Pour the wet ingredient mixture into the dry ingredients and stir with a spatula until just combined; do not overmix.

  5. Gently fold the diced apples into the batter until evenly distributed throughout.

  6. Brush a 9×11-inch baking pan with coconut oil and pour the batter into it, spreading it evenly.

  7. Sprinkle the turbinado sugar over the top if desired.

  8. Bake for 30 minutes, or until the center is set and the top is lightly browned. A toothpick inserted near the center should come out clean.

  9. Remove from the oven and let cool before cutting into portions. Serve as desired.
