Ingredients

3/4 cup strong brewed coffee, cooled

1/4 cup Baileys Irish Cream

1/4 cup sweetened condensed milk

1/2 cup sweetened condensed milk

1/2 cup whole milk

1/4 cup unsweetened dark cocoa powder

Directions

  1. Prepare the coffee layer by whisking together the cooled brewed coffee, Baileys Irish Cream, and 1/4 cup sweetened condensed milk in a medium bowl until fully combined and smooth.

  2. Pour the coffee mixture evenly among 10 popsicle molds, then insert a popsicle stick into each mold. Freeze until the mixture is firm and solid, approximately 1 hour.

  3. While the coffee layer freezes, prepare the chocolate layer by whisking the 1/2 cup sweetened condensed milk, whole milk, and unsweetened cocoa powder together in a medium bowl until the cocoa powder is completely dissolved and the mixture is smooth.

  4. Once the coffee layer is frozen solid, divide the chocolate mixture evenly among the molds, pouring it over the frozen coffee layer.

  5. Return the molds to the freezer and freeze for at least 4 hours, or until the chocolate layer is completely frozen.

  6. To serve, run the outside of each mold briefly under warm running water to loosen the popsicle, then gently remove from the mold.
