Ingredients

1 1/2 pounds ground beef

1 large onion, chopped

2 red bell peppers, chopped

4 cloves garlic, minced

2 tablespoons chili powder

1 14.5-ounce can diced fire roasted tomatoes

Kosher salt to taste

Fresh cracked black pepper to taste

1 1/2 cups shredded cheddar-jack cheese

4 hoagie rolls

Directions

  1. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until no longer pink and the internal temperature reaches 160°F, approximately 5 to 7 minutes.

  2. Add the chopped onion, red bell peppers, and minced garlic to the skillet. Continue cooking and stirring occasionally until the vegetables are soft and fragrant, about 5 minutes.

  3. Sprinkle the chili powder over the beef and vegetable mixture, stirring well to coat everything evenly. Cook for 1 minute to allow the spices to bloom.

  4. Pour in the can of diced fire roasted tomatoes along with their juices. Stir to combine, then simmer for 5 to 8 minutes, allowing the flavors to meld together. Season with kosher salt and cracked black pepper to taste.

  5. Divide the chili beef mixture evenly among the four hoagie rolls. Top each sandwich generously with the shredded cheddar-jack cheese, distributing about 6 tablespoons over each hoagie.

  6. If desired, place the assembled sandwiches under a broiler for 2 to 3 minutes just until the cheese is melted and bubbly. Serve immediately while warm.
